Have issues with the oven as it seems to always be on some sort of convection while heating up. Because of this, food seems to cook MUCH quicker where we are learning to cook 30-50 degrees cooler then recommended.

I see you are having concerns with your Samsung Range not cooking correctly. I have some helpful information to provide. The food should not be placed inside the oven until it is preheated. During the preheat the unit will unit some fan motion to heat the unit faster. See link below:
