What exactly do these echo's do? null

There is so much this product can do. You can ask it questions, ask it to play you music, order products online, and so much more.

They listen to every conversation in your house waiting to hear the word "Alexa" or whatever hot word you choose. You can control connected lights, thermostat etc. If you don't mind giving up all your privacy it makes a nice clock/weather station.

They do a lot of smart things, like your smart phone. They answer questions about the weather, world news, etc. They play music of your choice, including some awesome meditation music.
