“Can I take a piece of paper I have wrote on and get that piece of paper saved on this tablet ? How ? scan it ? E-mail it ? and I may have 100's of these written papers so would there be enough storage ? can these be arranged in 12 page sets ?”

Look for the "Tiny Scanner" app. You should be able to use this on any device which has a camera. It is free to download but there is a cost if you want to keep more than two documents in the app. Based on the number of papers you indicated, you might consider paying for it at least for a few months, to make it easier to work with the large number of documents you have.
