“Is it possible to use the Apple Pencil with this version (stupid question.. I assume the question is yes)? Also can I use any type pen / pencil (Stylus or others) ? Thanks”

Apple Pencil works wit it and yes you can use other types of pencil/stylus

This iPad Pro 11-inch supports the Apple Pencil (2nd generation), which is the best choice if you want to use it for drawing. There is a version of the Logitech Crayon that works with this iPad, but it doesn't support pressure sensitivity like the Apple Pencil does.
I would recommend:
