“I have the second generation with charging case but every time I’m listening to my audio it seems to switch to my speaker phone when I’m recording my audio on Snapchat or Instagram ? Anyone have suggestions please”

Try unpairing your AirPods and pair them again or restart your iPhone. Hope I helped!
