Yes. Especially if the things you are watching are apple offered like the movies app or apple plus. YouTube support closed captions as well. There is also a feature to stream all audio to up to two sets headphones. They work with apple headphones or beats. So you and your husband can listen via the headphones at the same time

You might find the Roku Ultra to be a solution, when you are using it to stream it plays the audio to a headphone jack on the remote control in addition to playing through the TV. It even comes with a set of ear buds in the box. Alternatively a setup for wireless headphones or earbuds to use with the TV could be set up for him. They can be set up so he controls his headphone volume independently of the TV volume setting.
