“Can you stream music with the watch that only has GPS and not cellular? For example if i have my airpods in and want to go for a run, can I leave my phone at the house and play music with my watch? Hopefully this questions makes sense!”

No. You will need the cellular one to do that. With this one your phone will need to be near.

The Apple Watch comes with 8 gigs of memory and you can program iTunes to download "top rated songs" or playlists etc. 8 gigs is around 300-500 songs, so you can use it for that.
