The band width is determined by the Apple Watch size and band design. Most of the Apple branded bands come with more than on size and have their lengths listed. Depending on the Apple Watch used they will fit a wide variety of wrist sizes. With Aftermarket bands you will need to check the packaging for any dimensions they may offer.
