What number iOS does this watch require null

WatchOS 7 requires iPhone 6s or later running iOS 14 or later. WatchOS 7 is available for Apple Watch Series 3 and later

I’m not sure. When I received my watch & went to sync it w/my phone I received a message that the IOS system needed updating which I did and had no problem syncing it w/my iPhone 12.
