• Follow the settings for the watch it guides you on how to add that alert and do much more also you can always go into a Apple Store and staff members will help you

• I believe that you mean the AppleWatch 7. This is done through the Watch app, on your phone. Scroll down to emergency SOS, and you can turn it on there
