At 13:00 there's a full chart showing VRM (power delivery) thermals in an overclock, and the TUF is right in the middle of the pack; the x570 Elite, is only slightly hotter than it. So you should pick the BIOS and feature set you like, as they're likely to be very similar in capabilities.

Both will be work fine. I personally prefer Asus products over Gigabyte. More reliable. Also, TUF is in the name, it'll take a lot of punish from the user.
