Not sure what it is but it works very well. It’s a deep gray, almost black surface. The insert is also coated with the same substance. It’s been used both with and without the insert and the food slid right out as it should. I personally feel that using metal utensils could possibly damage the coating though. Use your gentle utensils with this and it should last for a very long time.
