“How do you change the preheat time and temp for the preheat function? It says it can go from 1-60 mins and 180-409 but there's no way change it after pressing the P button.”

Just don't press the P button. Simply select a temperature that you would like to preheat to, then select a time that you would like to preheat for, and let it do it's thing.
