I don't believe you have to make two at the same time. I did run the unit empty for a while, prior to cooking the first batch to get it to burn in and there was no particular smoke or any ill effect

I have not had any problems with the functionality of this appliance as a result of your concern. Like I always say, it's not like you're ever going to wish you had less waffles. Buy it, your waffles will never be alone again.
