In my experience, the scoop is just that...a scoop. It's by no means an exact measuring tool. I've seen that most die-hard espresso fans measure the coffee by weight before grinding and tamping in the basket. For me, the scoop is just a plastic spoon to move my ground coffee around. I'm not sure there is a "right way" to use it. You can try different amounts of coffee in each basket and different amounts of water pulled through to make your espresso. This machine can save your pre-determined water amounts for brewing (that info is in the user manual). Best of luck!
