“When one ink cartridge is out are you able to only change that one without having to replace all?”

Yes. There's cyan, magenta, yellow, and black (black not included in this particular package). You can change any of them individually. I find that each of the 3 colors tends to run out at about the same time, so I've never had to buy just a single color.

Yes, the cartridges are independent. We have two of these printers and the ink lasts much longer than other brands.
