Yes you can. The blade is colored but the edge is stainless steel.

Hello, Yes, you can sharpen these knives with no isues at all. However, for the price, I always purchase a new set and give my older set to the Arizona Humane Society. I have been buying these knives for years now with absolutely no issues at all.

If you buy total Tech from Best Buy a Geek Squad agent will come out to your house once a month to sharpen your blades.

Yes, I pass them on a steel quite often to keep the edge.
