I HAVE NOT USED THEM A LOT. BUT THE TIMES THAT I HAVE, I HAVE NOT NOTICED THE PAINT COMING OFF.

This coating is ceramic and I assume it is food safe.

I would imagine you should just pick it out. It is bright green. Also most knives should be hand washed. That should save you from further chipping. But I would not recommend eating any of the paint if you can help it.
