• Yes. You can just turn the timer off and start over.

• I don't see why not. The unit had all manual controls. Nothing is digital.

• Yes. I have done this with no problem.. To turn unit off, simply turn timer knob to “off” position. Set your other knobs and turn on by re-setting timer.
