“Does the release of this 2800 line mean the connectivity for the 2700 line (drivers, software etc.) will no longer be updated with new Mac OS and iOS releases? Is there a timeframe on how long the 2720 & 2760 will continue to be supported?”

I don’t see why it would, they still update drivers and firmware for other printers that have long been discontinued, like any large manufacturer should.
