“I have a gateway FX 6840-1 fairly large case ,was wondering if this would directly swap out with power supply as this is my first time doing so , only upgrading to power supply so i can use a 1080 Ti card other variant , my main concern is just mounting”

I have dual 1070s in another system with an even smaller PSU, 600 or 750W also from EVGA and that also runs very cool and quiet. There is no reason you cannot run dual 1080s with the 850 BQ power supply if you had to do so.
