"Do you really want to damage your countertop when the cooktop needs repairs?" Huh?? Do you really want to damage your countertop and cabinets when a pot boils over and the overflow is sucked into the unsealed gap by capillary action? Doh! As others have said use silicone caluk to close the gap. I'd apply the sealant to the countertop, and lightly soap the mating cooktop perimeter before seating it in the sealant. Doing so you'll still have a barrier preventing the ingress of spills. However you'll be able to remove the cooktop for repair or replacement without needing to wrestle apart the perimeter silicone bead between both surfaces.
