“Does model number JTS5000SNSS have an option for conventional bake, or its limited to convection bake only? (ie, can we bake without the fan turning on?)”

If you don't want to use the fan, don't choose confection bake. Just choose the bake option. I usually use Confection Bake, so I don't know if the fan ever kicks on occassionally using plain Bake or not.
