“I would like to replace my washer and dryer with 2 of the combos. Can I connect one to the hot and one to the cold? Would I need to add an additional connection? How much time do I wait to start a cycle on the 2nd one to avoid overworking the drain.”

I think you could get away with y-ing off your cold water. As long as you can fit both hoses the drain will be fine.

Two Combos can be hooked up next to each other and run simultaneously and independent of each other. We wouldn't suggest running one only on the hot water and the other only on cold water. We do offer a part that splits the water source for the unit (part WX14X10014). Your standpipe must have an inner diameter greater than 1.5 inches and may require the hoses to be squeezed to insert. Standpipes that have an inner diameter of 2 inches or more will easily accommodate two drain hoses.
