“Can Apple CarPlay be installed into ANY car? Or must the car have a screen the same size as the Apple CarPlay to be properly installed? I’m thinking of purchasing a Hyundai Elantra & some of them don’t have navigation screens depending on the year & trim”

Hi there. Thanks for your question. As far as the purchasing of a certain model, that would be a question for the dealership. However, even if the one you choose does not have a radio equipped with Apple Carplay, generally we can install an aftermarket radio.
