“Can I put the refrigerator in a space in my lower cabinet? It will be surrounded by 3 "walls" (left, right, back). Is it ok to have the three sides surrounded? Will it overheat? The cabinet is 21" wide, 29" tall and 19" deep.”

If fully enclosed I think not. Read the owners manual (on line) and see, but I think you will need additional ventilation.
