“When making ice, if I decide I don't want anymore ice can I just turn it off and make more the next day without damaging the ice maker. Also would I have to add more water in it the next day.”

Adding more water is only dictated by the water level in your machine after the unused ice melts back to the reservoir. We typically keep the water level lower so fresh water is added more frequently but that’s not a must
