“Do they work independently of the other? If so are any capabilities lost? Can I still listen to music and answer calls when you use one headset? Will I lose ability to use controls on one vs the other heaset? Can I use voice controls?”

Yes you can use independently. It’s how I use it at work. You can still answer calls and listen to music with the right earbud on. I rarely use earbud controls. I just use phone for volume control. Voice controls are also still available.
