Most games can use just the two that came with the console for 2 player play. On the back of the game case it will tell you what controllers can be used and in what way.

You can just use one joy con for two. But sometimes it is better to have another set of joycone becasue it is wasier to control.

It depends on the game. Mario Kart uses only one of the paddles for a driver (since only one will fit into the steering wheel). Maybe for other games you’d need 4 paddles for 2 people, but in that case, you’d also need to purchase another paddle connector that came with the original switch.

You can charge 1, 2, 3, or 4 Joy Cons. I’m sure the more you charge, the slower it takes but I could be wrong. But if you only have 2, that shouldn’t be a problem for you! Hope that helps!
