Yes. The easiest way to pair these new Joycons is to just physically attach them to the desired system. They will pair immediately. Make sure to update them in the settings as well once attached.

You should be able to just press the sync button on the controller and the Switch will do the rest. The button is on the edge that connects to the Switch.

You can but first I would recommend that you would try to check your controller settings weekend sometime and share control settings Wi-Fi gets knocked off if you turn your system off.
