“Does this unit make a loud fan noise while cooling like the 500 model? I just installed a new 500 model and it is loud while heating up, running and cooling down. It continues for almost an hour after turning it off.”

I wouldn't consider it a loud fan noise. But loud is a relative thing for people. You definitely can hear it, though I feel it is relatively quiet and not obnoxious. And it can run for a while during cool down. It is like your range hood on the lowest setting. The oven on my Cafe Range is the same.
