This particular model does not have a steam cycle but there is a version with a steam cycle.  This unit will not allow you to add an item once the wash cycle starts.

1.) Yes, I found mine has a steam/Sanitation button

2) it does have a pause button! I use mine often for items I forgot to stick in the machine.
