I have a combo unit (Google Fiber) and I didn't have to disable anything. When you plug it in, you will be creating a new network and SSID for that network. So in the end you will have two SSID available (that's what i have). I kept the original for my home devices that I didn't feel like having to reconfigure and the mesh network for everything else. So you really don't need to disable it, but if you don't need it, its better to disable it as the less wifi noise/signals you have the better.

You do not need to disable the wifi on your Fios router for it to work. If you decide to disable the wifi, do not disable the 5Ghz network if you use Verizon's cable boxes.

If you're going to set it up with the Linksys Velop, then yes all you need to do is to disable the router functionality of the gateway, amagjr2003.
