When I purchased the Office Home & Student 2019 and installed it into my Mac why does word not use the 2019 version? null

You probably have both installed. Goto finder and type word and look if both icons show up. And then open the newer one. You can have multiple versions installed.

With Office 2019, you automatically get the most recent Office suite apps, including Word. Meaning, you do indeed have Word 2019.
