It doesn’t have a camera, at least not one for video (there’s a ‘shadow sensor’ to detect activity, but not for eaves dropping). I wanted to use it for video calling, but it can only function as an assistant with display.

No, you can't. Nest Hub doesn't have support for any feature that will let you eavesdrop.
