“Does my Modem need to be wifi-6 capable in order for me to utilize the full features of this Orbi router? What am I missing if modem isn't wifi-6? I have the Motorola Docsis 3.1 (#E31U2V1) modem that Spectrum provided.”

Your modem connects you to the internet through your internet service provider. It does determine what top speed you can get from the ISP. So if you have modem that can feed 200Mbps to your router and your router is capable of delivering 6Gbps to your devices, you will be limited to speeds of 200Mbps through your router. Your modem and ISP speed will be the bottle neck.
