Not sure how long it stays warm but it stays hot for long enough for me to drink entire pot. I would say at least an hour and a half. As for adjusting temp I haven’t seen that capability

The intelligent warming plate automatically adjusts the temperature of the warming plate to keep your coffee or tea at the ideal drinking temperature without burning it. You are able to adjust it to stay on for up to four hours.

Coffee comes out pretty hot, it doesn’t have an adjustment button though. It all depends what you put in your coffee for example I put creamer which I keep refrigerated therefore, my coffee it’s not boiling hot! Hope this helps
