The Nintendo Switch can output stereo audio or a 5.1 audio signal, but only through an HDMI cable. You should be able to run the HDMI cable from the Switch to your Audio Extractor, then run an optical cable to your audio setup. You would just want to adjust the Switch's audio settings so that it is playing audio in 5.1.
