“I’ve converted over to streaming through roku but still paying for internet and tv with spectrum. If I ditch cable and get an internet plan from another source can I add channels I’ll be losing without cable and is this option more costly”

It depends on what you are paying for cable TV. Those monthly subsciptions can add it if you are in need of several of them.
