It's possible that the cable you are connecting with has to be changed? We recently purchased a HD TV for our kitchen and we had the same problem when trying to set-up to see a full picture we would only have the analog option. It ended up we had to get a different cable to enable us to set up in HD. When AT&T came originally and connected the kitchen TV it was not an HD TV therefore when we tried using that same cable we couldn't so called the Help line and found out we had to get a different cable which costed us around $20. We tried getting the cable from AT&T but they do not supply customers with cables. My husband ended up going to Best Buy and bought the correct cable and that did the trick. I'm no expert by all means but it could be the cable preventing you from your set-up. I hope this helps.
