“How do I get my 8 serious to not always be in 16:9 format when I click on it in settings it says function not available. It's greyed out in the setting menu. very frustrating as my old tv I could adjust to get rid of the ridiculous oversized widescreen”

I don’t think I’m doing much help, but yes, the picture size setting is set at 16:9. I can’t change it as well, but picture mode does help me to find something that can somewhat solve the problem.
