Hopefully I'm not too late to help you out, but the main difference between the two drives is speed. The Pro is faster than the Evo, although the speed difference may not be substantial enough for you to justify buying it yourself. Unless you are a serious gamer or running programs where every mb counts then I wouldn't say you would need the Pro.

The Pro has better technology and is faster, more reliable, has more features, and comes with a 10 year warranty. (Yes, they stand behind this one!) The 850 Evo is almost as fast, uses less glamorous tech, is not quite as reliable, and comes with a 3 year warranty. Yes, the Pro is definitely better, but is it worth the extra money? It will depend on how you will use this SSD. If you are a typical user then the Evo will be fine, it's a great drive. However, if you are a power user who needs the fastest mission critical, must not fail ever drive, then maybe the 850 Pro will be worth the extra cash. I bought an 850 Pro but only because I found one at a steep discount that was too good to pass. Both are stupid fast and more reliable than most users will ever require. (but then again so are most of the other reputable SSD's on the market these days.) Unless it's on sale or you plan on thrashing your SSD 24/7 or you absolutely need the slightly faster speed of the 850 Pro the 850 Evo is a better deal.
