Yes the unlocked phone should receive software updates from Samsung. I have an older Galaxy Note phone that is unlocked and has received updates from Samsung. The phone carriers usually customize their software updates slightly and probably pushed out faster than Samsung.

It has nothing to do with carriers, no matter what carrier you use, it has nothing to do with the updates. Samsung will push the update through OTA once it's ready for the model. For example, the S7 ATT is G930A, verizon is G930V, unlocked is G930U. So even if you are using verizon on an unlocked G930U, it will not update even the G930V updates are out, because it has to wait for the G930U (unlocked) update to be pushed to the phone. So if you get the unlocked version, it will push the updates to the phone when it's ready no matter what carrier you are using . From my experience, usually the unlocked ones get updates earlier than the carrier ones, but for S7 it was not. I think unlocked version nougat came the last.
