“I'm not sure which version of the Watch I have, Bluetooth or LTE, it has a phone number associated too it and linked to my phone. What does that mean?”

Contact your phone provider. But if your watch has it's own phone line, then it is both Bluetooth and LTE. If it was just Bluetooth, it would not have it's own phone line.
