They will keep the playback speed to whatever you set it.

Yes, YouTube on iOS will pause video playback at 1.5x or 2x speed and this functionality is separate from your Bluetooth headphones. The Shokz OpenSwim Pro and older Bluetooth headphones are not the cause of playback pausing; the pause is a user-controlled action to stop the video.
