• 2.1 amplifier means two speakers plus one subwoofer. Fom the Sonos User's Guide we have - Two pairs of 8 ohm speakers wired in parallel are also supported. So, yes, the pairs of speakers plus sub described in the question are fine.

• You can power any set of speakers you want. Amp has left and right output. Only two speakers (set) can be connected.
