Yes, you could connect your soundbar's input to the connect's output for audio to be controlled from the sonos app, but heard on the soundbar.

I am not sure having Dolby Atmos justifies this complexity. Nothing wrong with Dolby, for the past more than forty years their logo sticks to every major manufacturer's front panel and gives the user the certitude the sound they hear is the best possible. I am not aware of any of the popular, Dolby licensed soundbar other than probably the Yamaha sound projector that will improve your listening experience over the Sonos Playbar. What I am trying to say without bashing to much the Dolby Laboratories is sometimes simplicity gives better results. There are many technical reasons I gave you this advice and feel free to ask additional questions.
