probably just for ease on servers and shipping obligations. they send these out with the code you pre install it so the download is over before the release and then people are able to play it immediately

Releasing the Limited PS5 before the actual game comes out allows buyers to set up their account, transfer saved data to their new console and continue to buy and play video games on their PS5 for the next 2 months while they wait for the Spider-Man 2 game to release.
