“I have a Samsung Q70 TV/Roku Streaming+ stick/Vizio SB3632 soundbar. I want to replace the soundbar with the Sony and use with existing 5.1 set-up. Will this receiver function like my soundbar with my Roku remote i.e. turn receiver off/on, control volume?”

That really should work. Everything you mentioned above supports HDMI CEC (Consumer Electronic Control), which allows the devices to communicate with each other over the HDMI cables (just like they have been doing with the soundbar already). You mentioned already having speakers, just make sure they are the correct impedance to use with this receiver (6-16 ohm).
