“of all my other TVs, the Remotes have a key for "PIC SIZE" or similar, I can change the picture size like "4:3", "16:9", "Full Wide", "Normal", etc. by just pressing the key. How do I perform the same operation on this Fire TV? On Remote or otherwise?”

It’s not on the remote. You actually have to go into the settings and do it from there. It’s under the sub settings for the different inputs
